ENJOY THIS GRILLED CHEESE WITH PEACHES RECIPE FROM THE VIRGINIA DEPARTMENT OF HEALTH’S MYPLATE

 

While grilled cheese is almost always a crowd pleaser, the traditional sandwich lacks hearty nutritional benefits, leaving kids satisfied in the short term but snack-hungry soon after. The Virginia Department of Health has revamped the classic family favorite and made a seasonal grilled cheese that is both delicious and nutritious! In about 15 minutes, you can have an ideal lunch for the family, serving fruits, vegetables and 25 grams of protein within one tasty and seasonal sandwich.

How to Pick the Best Peaches

Fuzzy-skinned peaches come in many varieties, ranging from light pink/creamy white to red-shaded yellow, and have different flesh colors that range from pink-tinged white to yellow-gold. When selecting your peaches, inspect for bruises and soft or shriveled spots. Also, avoid fruits that are excessively hard or green. Pick peaches that are intensely aromatic and give to gentle pressure. To elongate their life, store ripe peaches in the refrigerator for 3 to 5 days.

 

Grilled Cheese With Peaches

Ingredients
  

  • 8 slices whole grain bread
  • 1 15-oz can peaches, drained
  • 8 slices low-fat cheddar cheese
  • 7.5 cups spinach
  • 4 tsp vegetable oil

Instructions
 

  • Heat vegetable oil in a large non-stick pan over medium heat.
  • Place 4 slices of the whole grain bread in the pan.
  • Layer in this order: place one slice of cheese, a handful of spinach, 4-6 peach slices, another slice of cheese, and a slice of bread on top.
  • After 4-5 minutes, flip each sandwich and cook for another 4-5 minutes.

 

The recipe is simple, providing room for the kids to help you in the kitchen, or even giving older kids an opportunity to make for themselves. Kids will love getting to be a part of the layering process, but they will love the savory, sweet and healthy sandwich even more! The recipe is also family-friendly because it allows you to incorporate your family’s preferences when it comes to the cheeses.
