2 cupsmixed vegetables, chopped(The VDH recommends the seasonal vegetables listed in the above paragraph, but you can tailor your veggies to your family’s personal preferences.)
1cuptomatoes, chopped
1tbspmargarine
1/4tspgarlic powder
1/8tspblack pepper
3tbspparmesan cheese
Instructions
Cook pasta according to package directions, and return pasta to the warm pot.
While the pasta is cooking, heat the vegetable oil in a skillet, and add the mixed vegetables. Sauté them until tender, and make sure to stir constantly.
Add the tomatoes and sauté the mix for two more minutes.
Pour the vegetable and tomato mixture over the drained pasta.
Finish by adding the margarine and seasonings to the pot and stirring.
